Snowed in.

We have relocated back to our home town for the time being and it is known as the land of four seasons, usually all in one day. Tuesday the weather man predicted we would get 1-3 inches of snow. And the weatherman is usually wrong. So at about 7pm that night it began to snow... And then blizzard. We woke up to the lowest point of snow being 12 inches and the highest point being 26. And we are on te valley floor

Needless to say my assistant and pride of joy loved every ounce of snow..

Spanish quinoa with black beans and corn

My two year old devours bowls full of this protein packed, clean eating meal. As simple as it is, it makes a great side to our taco Tuesday nights or as a main dish on meatless Mondays.

Ingredients:
2 cups quinoa
5 cups water
1 cup salsa ( I use Kirkland organic)
1 can black beans; drained
1 can organic corn; liquid included




In a large pot mix the 2 cups quinoa; 5 cups water and 1/2 cup salsa, cook on low until most of liquid is absorbed; then add remaining salsa, black beans, and corn. Mix well and continue cooking for about five minutes until the liquid is absorbed


Serve and enjoy!!

5 ingredient creamy chicken chilli

Let me just say I love Pinterest and the recipes I find. I found this recipe from Pinterest on plainchicken.com and it is favorite ( I made a second batch yesterday after the family devoured it) and it takes minutes to prepare.

1 lb chicken breasts (I put it in frozen)
1 can corn; liquid included
1 can drained black beans
2 cups salsa
8oubces of cream cheese

Place in crockpot in that order, store and cook on high for four houses



We serve ours over tortilla chips

A little update

An update on the chaos of my life:
1. My husband lost his job at the beginning of December
2. We both are trying to find work
3. We are graciously living with my father as well get on our feet

4. My thankfulness is that my strong willed blessing, Aria, is now on a bedtime routine, for this is grace in it self!!
My daughter used to be the energizer bunny, literarily never sleeping. Now we read bedtime stories at ten( earliest I can get her to rest), tuck her in, say our prayers, and boom she is asleep. Just look at that happy face 😃 before bed.

My apologies

I started this blog as a baking blog, as I cooked through what at the time was the chaos of my life. That chaos was a huge understatement as how chaotic my life was going to get and is still continuing to be. Through the time off my blog, my chaos, and by the grace of God I have decided to start blogging again. But revamping this blog as the grace of God working through me and overcoming the chaos. I will still be posting recipes but will have more real life, gratitude, and sharing my blessings, whether it be stories, recipes, or life lessons.

If you feel this blog is not for you to follow, I understand, but revamping my blog is revamping my life.
